About the Brewery: Osuzuyama Joryusho / Kuroki Honten
Kuroki Honten started as a shochu distillery and in recent years expanded their product line to gin and whisky. The philosophy of the house is deeply routed in its respect to nature and its land. Everything is produced as naturally as possible, using local resources. Waste from distillation are then recycled and returned to mother nature as organic fertilizer.
The distillery is located in the forest of the Osuzu mountain. Much inspiration is drawn here and wood is in the heart of the production. Obisugi, a local type of cedar that was used to build ships during the Edo period, can be found in the koji room and barrels. Soft rainfall water which runs through the mountain and the Omaru river is sourced and purified. Some of the raw ingredients used are even farmed by the distillery themselves. Their low impact, recycle, and local approach brings out a special regional character in their products.
