Tomonobu Mitobe is the fifth generation owner and Toji (brewmaster) of this family run brewery. Mitobe Shuzo focuses on the traditional way of making sake - when things are done slowly, with great care and attention to detail. The style of their sakes are generous, rich and expressive. The crisp and sharp finish characters of their sakes come from the mineral rich water source of the Yamadera temple, which is hard water from the Ou mountain range. And, the brewery even grows some of their own sake rice!
