Jikon / Takasago / Kiyasho Shuzo
A rare product to find, Jikon has a cult following among sake enthusiasts. Onishi san, Toji and owner, painstakingly controls all aspect of the production ensuring the perfect humidity and temperature at each stage of the process. The result is a gorgeous sake that is easy to drink with juicy fruitiness, freshness, light sweetness and very balanced acidity making it a favorite amongst many. As it is small-batch hand-made sake using local rice, the sakes are difficult to get a hand on even in Japan.
