Founded during the Edo period Hiroki brewery is run by Kenji Hiroki, 9th generation owner and Toji. Mr. Hiroki worked an office job and did not brew sake until he was expected to take over for his aging father. When his father passed, the brewery almost shuttered due to his lack of experience. However, determined and with diligent guidance, Mr. Hiroki experimented and learned how to brew what he humbly believed was "decent sake". But it was more than decent, it was special and explosive.
