QVEVRI METHOD & SATSUMA JARS

The distinct, rich earthy character found in Komaki's products can be attributed to the ancient Japanese Satsuma jars used in the production of the shochus. The jars used today are the same since its founding in 1909. The jars are buried into the ground and used for the preparation of the starter and also the fermentation process.
