A taste of history, this is a reproduction of an ancient sake from the Edo era, known as Red Sake
Tastes like: rock sugar candy, ripe canteloupe, honey, nuts
It might be called Red Sake, but don't be fooled. The drink is the beautiful color of amber and not at all red! With matured, deep, umami aromas that comes from gracefully aging, the taste itself is a surprise contrast of gentle sweetness.

But what is the story of this unique and rare sake? It's a peak into the history of Kumamoto during the Edo period when the only alcohol allowed to be produced and consumed within the prefecture was Akazake. And the feudal lords loved drinking it! Today only two breweries are left producing traditional Akazake in Kumamoto.

This akazake is an unpasteurized alcoholic beverage made using rice from the Kikuchi basin and water from the local shrine's well. The akazake was never pasteurized but was instead sterilized using wood ash, known as Akumochizake. The ash also increases the alkalinity of the drink. The overall effect is a soft, thick, smoothness of rock candy sugar that coats the mouth.
