About the Brewery: Yamagata Masamune / Mitobe Shuzo

Tomonobu Mitobe leitet diese familiengeführte Brauerei in der fünften Generation als Eigentümer und Toji (Braumeister). Mitobe Shuzo konzentriert sich auf die traditionelle Art der Sake-Herstellung – bei der die Dinge langsam, mit großer Sorgfalt und Liebe zum Detail gemacht werden. Der Stil ihrer Sake ist großzügig, reichhaltig und ausdrucksstark. Der knackige und scharfe Abgang ihrer Sakesorten stammt aus der mineralreichen Wasserquelle des Yamadera-Tempels, bei der es sich um hartes Wasser aus dem Ou-Gebirge handelt. Und die Brauerei baut sogar einen Teil ihres eigenen Sake-Reis an!
