About the Distillery: Eirin Shuzo
The distillery actually began as a sake brewery in Kurume 200 years ago. Eventually, the brewery expanded it's production to gin which uses by-products from the agricultural process. The unique process of Eirin Gin, unlike other gins, is the use of its sake as a base spirit. The sake is first distilled, then macerated in botanicals, and distilled once again. The result is elegant with subtle notes of lingering sake complimenting the chosen botanical.
