A modern style of junmai daiginjo that brings about earthy flavors and a deep umami from the sherry barrel aging process.

The idea for this product started in 1990 by Izumi Keisuke when he was looking to experiment with white wine. What was it like to mix white wine with ginjo sake? It rounded out the sweetness of sake by the acidity of the white wine, but it was too overpowering. After doing more research and diving into the Scottish whiskey sphere, Izumi Keisuke learned about the process of storing and aging whisky in sherry casks. Well, let's try it!

In 1993, the brewery imported their first sherry cask and was very nervous to fill it with 500 liters of expensive Daiginjo sake. As they tasted the sake, it was not right but found that with long aging, the flavors started to meld beautifully together. This was a new process that was never done in Japan at the time, people commented that it was completely "unorthodox". But it quickly sold out after it hit the market.

The product today has evolved with more research on Sherry production in Spain. It is a Junmai Daiginjo sake that was well aged in sherry barrels from Andalusia. A beautiful sake that will pair well with all types of cuisines.
