This sake is brewed from Shigaasahi rice. Shigaasahi used to be widely grown and harvested in Shiga Prefecture but has been diminished in the recent decades. The local rice farmers and the brewery collaborated on reviving this rice sort, which is actually very suitable for the local climate and environment.

Having a sip of this sake is like having a trip to Shiga Prefecture. The scenary of open and wide rice field will appear in your head, and you can feel the fresh wind blowing through the green leaves of rice plants in the field...

To express the terroir and to derive the rice character the best, the brewing style is rather simple. Rather dry and light, and round umami of rice gently spreads on palate. Another all-rounder sake that celebrate your food anytime you need it.
