An aged natural sake that only gets better as it gets older. Spontaneously fermented and brewed using the traditional Yamahai method. A collectible item that can be aged further at home and retains its vintage value well. Powerful minerality and nutty flavor.
Tastes like: salted caramel, nuts, neat minerality and fine texture
The sake has a clear and powerful mineral-like aroma with slight caramel and nutty nuances that give it a well-balanced character.

This product is the 2022 vintage of the Kokoku aged sake series. Kokoku has the literal meaning of "ageing turning it into an amber". The sake has a beautiful amber color indeed.

It is a naturally brewed sake done by sponteneous fermentaion without added yeast. In order to give the sake the ideal character for aging, they chose to brew using the Yamahai method, which makes the sake taste intense with depth and body.

From this vintage you can feel the clear note and minerality and a well-balanced taste with a hint of caramel and nuts. The mouthfeel is fine and smooth, with a gentle but firm flavor profile and a long, complex finish.

The sake is very enjoyable today, but also has a potential for further aging.
It is also a great idea to have a collection of Kokoku in different vintages, just like Sarah at home!
