About the Brewery: Hiraizumi Honpo

This is the second oldest brewery in existence, still run by the 26th generation of the family. The Toji's humbleness allows him to explore new styles and techniques of sake production that brings about exciting sakes with a modern twist. Think light fruity, dry stakes with gorgeous acidity that gets almost wine-like.
